Thai Iced Tea & Popsicles


Today I’m sharing how we make Thai iced tea and Thai iced tea popsicles + a cute orange dress from a small shop! Enjoy!


One of our favorite things to do in NYC is go to Pinto! A Thai restaurant in our neighborhood, they have a beautiful indoor garden that we enjoy year around. I just LOVE eating out, getting dinner before going to broadway or meeting friends for a bite. Due to COVID-19 we haven’t dined out (or really left the house) since early march. I honestly haven’t missed it much because we’ve been cooking yummy things at home, but when my mom had the idea to have a Thai night at home complete with a Thai Iced Tea I was super excited!!

Thai Iced Tea:

Ingredients:
Thai tea mix
Black Tea
Filtered water
Dark brown sugar (or regular white sugar)
Sweetened condensed milk
Evaporated milk
Ice

How To Make It:  this is super easy! three steps. Make tea, Make cream froth & then Assemble drink

Make The Tea: Bring 2 1/4 cups of water to a boil on the stovetop. If you’re using an electric kettle with a temperature setting set the water temperature to 208°F. This will taste better made with better water, so use filter water if possible!

We used this Thai tea mix & added a few tea bags of black tea (any works,
we used English breakfast tea because we had it on hand). Add sugar to the mix in the teapot and steep for 5 minutes. Strain tea solids and let cool.

Make The Cream Froth: Combine sweetened condensed milk and evaporated milk and freeze for 20 minutes. The milk mixture is ready when you see a crystallized layer forming around the sides. Use a handheld milk frother to whisk until the slightly frozen sweetened milk nearly doubles in volume.

Make The Drink: Pour cooled down tea into two cups filled with ice. Leave some room at the top for the froth. Top the drinks with the light and airy whipped milky froth. We use mason jars but the recipe calls for 17oz cups. Stir before drinking

Experts recommend you serve with crushed ice, but I like tea ice! Freeze some tea mix in cubes to add to the drink instead of normal ice, this will keep it from getting watered down!

NOTE: Thai iced tea has heavy coloring in it that stains like crazy!!!

We have also been making popsicles using this kit & these sticks, so while having Thai lettuce wraps & iced tea over dinner I had the genius idea to make Thai iced tea popsicles! We premixed the tea with the cream and added a dash of vanilla before adding to the mold! You could also sweeten with simple syrup if you wanted or not at all, up to you. try a few different levels of cream & sweetener to tailor it to you. For instance, I like more cream in mine than Paris does!

For Popsicles:
Make the tea per the instructions then convert to popsicles. We omitted the ice (obviously) and made the cream mixture but didn’t worry about chilling and frothing it. We also substituted the canned evaporated milk with cream  (we just prefer the taste of fresh milk to canned milk)— on one batch we used half and half and the other batch I used heavy cream, both worked it is just a personal preference. Whichever cream used, we added in the sweetened condensed milk so the flavors were stronger and sweeter.  I mixed the tea and cream mixture together — about equal parts —  and put in the molds.

I bought a dress, scrunch & a mask to match. I would buy it in 100 more colors if she offered (she offers, black, green & a yellow floral too). I also sent Lauren a message and asked her to make a bandana for me in the same fabric to wear in my hair! I couldn’t be more in love with the look! You can buy your normal size, but then send your exact bust and arm measurements to ensure it fits perfect! Sizing goes up to XL but I’m sure if you sent Lauren your measurements she could make one just for you! She also makes other dress styles, pants, shorts & tops
